What to do with a cut unripe mango // Roasted mango recipe

So I like to cut up fruit for smoothies, portion it and freeze it. I really love mangos so I use them a lot, I really should have known better. I picked one up and it felt ripe, but as the knife went it I realised how wrong I was. I figured I would carry on and decide what to do after. Luckily my best friend Google informed me the best thing to do is cook it, which I was curious to try.

Here are my results- it was so good.


1 mango (I'm guessing ripe would work just as well)
2 tablespoons soft brown sugar
1 teaspoon cinnamon

I preheated the oven to 180°c for my fan oven. (200°c non fan.)
Mix everything together in an oven-proof dish.
Cook for 15-20 minutes.
It is ready when the top is browned and the fruit is soft. Adjust the time depending on the ripeness of the mango.
I enjoyed mine on top of vanilla ice cream, it tasted so perfect. 

As for cleaning the pan, I put it in the sink and filled it with boiling water from the kettle. All the sugar melted and washed straight off!
